Praise be to this soup!
After a day of fever and suffering, I made the exec decision to have it for dinner last night and lo, I am healed. I seriously feel so much better. 

I keep buying the ingredients for this soup. And we keep making it. 6 times in the last 4 weeks. And every time we sit down to eat it, we squeeze the lemon in, take a bite, and T says “WHY IS THIS SO DELICIOUS” It is now referred to as “the soup”. I don’t understand why it is so amazing but it is SO good. 
And so easy. Buy a pack of 6 chicken thighs, freeze 3 for use when making your next batch. A box of orzo will last you through 8 or 9 batches. A head of celery will last 2 weeks or so…I just need a dill plant. 

I need to remember this recipe.

Quinoa veggie bake

I’m going to apologize in advance if I miss any steps or if I’m pretty vague with my directions. It’s been a long day and my pregnant brain doesn’t work so well right now. :)
I make this dish at least once a week. It’s super easy and delicious! Hope y’all like it as much as we do.

-Quinoa (prepared according to the package)
-2 cups chicken broth (used instead of water for the quinoa, omit if vegetarian or sub veggie stock)
-24 oz jar plain diced tomatoes or 8 oz can diced tomatoes ( I buy the full jar and only use about 3/4 of it and use the rest for pizzas.)
-1 TBL tomato paste
-1clove garlic chopped
-6 small fresh mozzarella balls cut into quarters
-3 small zucchini cut into chunks
-1 yellow bell pepper cut into strips
-1 green bell pepper cut into strips
-1 Spanish (yellow onion) cut into strips
-1/2 cup shredded mozzarella
-6 fresh basil leaves torn into small pieces
- handful parsley chopped
-1 TBL extra virgin olive oil

Set oven to 400.
Cook quinoa according to package directions using stock instead of water.
Cook veggies in olive oil until soft on medium high heat, about 6-7 minutes. Add garlic and cook for about a minute. season to taste, I use about a tsp of salt and 1/2 tsp pepper. Add 3/4 cups of diced tomatoes or full can if using and tomato paste. Simmer for a few minutes. Turn off heat and add in basil and parsley. You’ll need a large bowl for this next step. Toss together quinoa, veggie mix and mozzarella balls.
Put mix into a greased baking dish, I used a 13x9 but you could use an 8x8 but just add about 6-7 minutes more onto cooking time as it will be thick.
Sprinkle top with shredded cheese.
Bake at 400 for 20 minutes or until cheese is golden and melted.
Enjoy!

I served mine with an arugula salad sprinkled with salt and pepper and dressed simply with half a small lemon and drizzle of extra virgin olive oil.

My cravings have really kicked in the last couple of weeks. I could eat salads, Mexican food and fruit of any kind every day and I would be happy. I have a few food aversions, one being butternut squash, which I usually love. 

I’ve been feeling her move for the past two weeks and I am loving it. Hubs has felt her a couple of times and Owen won’t keep his hand still enough to feel anything. She’s very busy in there. ;)

I am getting really excited about the nursery and can’t wait to share pics once things get moving. For now, I’m still getting over the shock that it’s a girl. I LOVE my son and wanted a boy the first time around, but I really wanted a girl this time. I’m feeling very fortunate to even be pregnant again and even more so that we’ll have one of each.

GIRL!!!

We are so excited and can’t wait to meet her!

Owen went with us to the appointment but really wasn’t all that interested after the first 3 minutes. Despite the fact that he was more interested in running around than watching the ultrasound, (I don’t blame him, I never know what l’m looking at either) it was a very special moment for our family and I’m glad we were all together. I can’t believe I’m going to have a daughter!

I saw this great pin floating around on pinterest. It was from Good Housekeeping, it’s a great resource on how to roast vegetables.

I agree that the roasting concentrates the flavor, and it’s one of my favorite ways to eat vegetables.

I updated the chart a little by adding a few more in, and I also changed some of the seasoning combinations.  I realize that some people think that tomatoes are a fruit, but I like to slow roast them.

Maybe when the weather is warmer, I’ll put together a how to on grilling fruits & vegetables.

Hello! It’s been so long since my last post but as you can see, things have been busy around here. 

Just to catch y’all up on what’s going on in our house-

-Owen is potty trained and I have pre-school to think for that! It happened really fast and I think watching his friends at school use the potty made him want to. 

-After losing our sweet dog, Mia, we felt like something was missing and we decided to go through a rescue to adopt another boston terrier. Her name is Milly and she is awesome. She’s the one on the left. This was after a checkup in October which is why they have halloween bandanas on. We love her and although she can’t replace Mia, she has made us and our other dog, Maddie, really happy.

-So, I’m obviously pregnant! I am 15 weeks today and am due in July. I can’t believe I am showing this much already…I looked like this when I was 20 weeks pregnant with Owen.  At one of my appointments the other day, a male nurse told me I had to be carrying twins…wow, thanks. I’ve been told by many of my friends who have more than one child that this is normal and not to worry. Any of you second time Moms out there, did you start showing earlier with your second? 

I promise I will be better about blogging. The first trimester was really hard and I am just now getting my appetite back so I will have some fun meals to share with y’all very soon.
