Sorry for my absence. I realize I have not been very good at this whole blogging thing but honestly I am so busy during the day that when I get a break, the last thing I want to do is get on here and type out a recipe or upload pictures of my sweet boy. So, really quickly, this is what we have been up to…
-potty training…ugh, just when I thought we might have this down, Owen decides the potty is now “scary”. We’ll get there, I’m sure.
-Our dog, Mia, was diagnosed with lymphoma in March and we have been trying to spend as much time loving on her until she takes her last breath. She is still eating and letting me rub her belly so I know she’s not quite there yet. We’re all so sad about it but have been trying to think positive and using this time to enjoy every bit of love she has to give us.
-Owen has transitioned to a big boy bed and LOVES it. He especially loves that he can just get out of bed and surprise us in the middle of the night…there is nothing scarier than waking up to a little person standing next to your bed at 3am.
-My Dad proposed to his girlfriend over Easter and they are getting married in June!
-I had two wisdom teeth removed at the end of January and I stupidly did it without being put under. Not a good idea, y’all!
-Kelly took me to a Tom Petty concert as an early Mother’s Day gift a couple of weekends ago and it was AMAZING!
Life has been crazy lately but I am really going to start trying to contribute to this little blog of mine! Thank you to those who have stuck around!

About a month ago, a friend of mine posted this video on her facebook page. I can’t stop watching it! Here’s the link to the original artist, which is also amazing but I am really loving this version.
I cannot believe how big this kid is now. It blows my mind that at this time last year, he was still somewhat of a baby. Well…not anymore and this picture confirms that! I also registered him for pre-school last week… I think I might go crawl into a hole and cry now.
side note: I’m actually really excited for him to start school and have a little bit of independence, but I will miss having him around all day to make me laugh, hug me and annoy me. :) Also, his hair is growing out and is looking so much better. I don’t think I’ll ever cut it again. Which is probably a good thing considering there were some readers out there who thought my last post about his hair was crazy and that I seemed angry. Well, I was angry…at the woman who chopped his hair up. And anyway, I was making a joke of it, so get over it.

Y’all, look at my child. (Please ignore the graham cracker crumbs on his mouth…) I told the hairstylist to “clean it up” and this is what I got. WHAT!?! While he is still the cutest boy ever, he does seem to be channeling Lloyd Christmas.

Our Sunday morning consisted of this,
So very cool if you have kiddos, nieces, nephews or some free time! The line was extremely long but definitely worth the wait so get there early. It doesn’t look like there are a ton of tour dates in the U.S but some dates have not been confirmed so they may be traveling to a city near you. Ok, so I know I have been a terrible blogger! I’m still here checking in on all of y’all but honestly, I have just been so bored with this blog. I’ve had no motivation to come up with new meals and my old recipes just weren’t cutting it. Then I found Pinterest (check out my boards here) and all of my love for food came back. I have now been inspired to try some new things out. The first one is this pizza. I’ve made it several times and it has yet to disappoint!
I came upon this recipe about 2 months ago and we now eat this once a week. I don’t actually make my own dough because, sadly, my baking skills are lacking. I buy the organic whole wheat ready-made pizza crusts from whole foods and they work just fine in this recipe. I’m sure any other crust would work just as well too. I also use store bought pesto and pulse it with a bunch of fresh sage leaves.
I’m not sure why this looks burned but I promise, it’s not! This is one of the easiest meals I make and it is absolutely delicious!!
Five years ago today, I married my best friend. You never think at 17, you might meet the one who will change everything for you, but I did. He was 20 and as far as my parent’s were concerned, unavailable. But, he charmed his way into my parent’s hearts just like he did mine. 11 years together, 5 of those as husband and wife and he still takes my breath away. These last 5 years haven’t been without it’s struggles. It’s been hard and we have had to work at it, but those hard times have shaped us into who we are today as a couple. He has made me a better person, a stronger person and one that I can be proud of. We have seen each other through some of the best times and some of the very worst times. Through my high school graduation, both our college graduations, the loss of two grandparents, moving 4 hours from each other (which only lasted 6 months), my crazy panic attacks, many of our dear friend’s weddings, two divorces, many, many tears, the purchase of two houses, health scares, the loss of two parents and the birth of our son. Kelly, I wouldn’t trade a day of these last 5 years of marriage with you for anything. Thank you for being by my side through it all. There was always you, sweetheart. I love you. More than yesterday, less than tomorrow.
Kelly is my husband and Owen is our son. We live in Austin, TX with our two boston terriers, Mia Louise and Madeline Lucille and we LOVE food. I am always trying new recipes out and making them healthier for my family. This blog is about my love of food, my life and my family.
